Ingredients
For the toast:
- 1 cup cottage cheese (full-fat for best creaminess)
- 4 slices brioche bread
- 1 cup unsalted butter (I like Kerrygold unsalted butter for this)
For the cinnamon sugar:
- 1/8 tsp salt
- 2 tsp cinnamon (freshly ground preferred for more flavor)
- 2/3 cup granulated sugar
Step 1: Prepare the Oven and Baking Sheet
Begin by preheating the oven to 430°F (220°C).
While the oven is heating, line a baking sheet with a silicone mat.
This will help prevent the toast from sticking and ensure even cooking.
Step 2: Make the Cinnamon Sugar Mixture
In a mixing bowl, combine sugar, cinnamon, and a pinch of salt.
This mixture will give your toast a delicious flavor and sweetness.
Step 3: Prepare the Bread Slices
Take your bread slices and spread 1½ tablespoons of butter on both sides of each slice.
After buttering, sprinkle the cinnamon sugar mixture generously over both sides of the bread to coat it well.
Step 4: Bake the Toast
Place the prepared bread slices on the lined baking sheet, ensuring they are spread out evenly.
Bake in the preheated oven for 5-8 minutes, or until the edges start to turn golden brown.
Once the time is up, carefully flip the slices and bake for an additional 3-5 minutes until both sides are nicely crisped.
Step 5: Cool and Add Cottage Cheese
Once baked, set the cinnamon toast aside to cool for a moment.
After it has cooled slightly, spread ¼ cup of cottage cheese on top of each toast.
This will add a creamy texture that complements the sweetness of the cinnamon.
