Ingredients
For the base:
- 1/4 cup cottage cheese (full-fat recommended for creaminess)
- 1 slice bread (sprouted or your favorite variety)
For the almond butter and berry topping:
- 1 tbsp almond butter
- 1/4 cup berries (fresh or frozen and thawed)
For the peanut butter banana topping:
- a sprinkle cinnamon
- 1 tbsp peanut butter (natural or homemade)
- 1/3 banana, sliced
For the hard-boiled egg topping:
- 1/2 tsp everything bagel seasoning (I use Trader Joe’s brand)
- 1 hard-boiled egg, sliced (medium to large size)
For the avocado and red pepper flakes topping:
- 1/4 avocado, sliced
- a pinch flaky sea salt
- 1/4 tsp crushed red pepper flakes
For the optional smoked salmon topping:
- 1 tbsp red onion, thinly sliced
- 1 tbsp capers
- optional fresh dill sprigs
- 1-2 oz smoked salmon (cold smoked variety preferred)
For the optional tapenade and vegetable topping:
- sliced cucumbers
- 1 tbsp black olive tapenade (store-bought)
- a pinch flaky sea salt and ground black pepper
- sliced cherry tomatoes
Step 1: Toast the Bread
Begin by toasting a slice of sprouted grain bread or your preferred type of bread until it is lightly browned or to your desired level of doneness.
This will serve as the base for your toppings.
Step 2: Spread Cottage Cheese and Optional Base Layers
Once the bread is toasted, spread 1/4 cup of cottage cheese evenly over the bread.
If you prefer using nut butter or tapenade, spread those first on the toast before adding the cottage cheese to create a flavor base.
Step 3: Choose and Add Toppings
Choose one of the following topping combinations and add them on top of the cottage cheese:

- Spread 1 tablespoon of almond butter over the cottage cheese.

Avocado & Red Pepper Flakes
