  • 1 pound bacon, chopped
  • 1 diced onion
  • 8 eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon hot sauce (optional)
  • 4 cups thawed frozen hash browns
  • 2 cups shredded sharp cheddar cheese (8 oz)
  • 1 1/2 cups shredded swiss or gruyere cheese (6 oz)
  • 2 cups small curd cottage cheese (16 oz, 4% or 1% fat)
  • Chopped fresh chives (optional, for garnish)

Step 1: Preheat the Oven and Prepare the Baking Dish

Preheat your oven to 350°F (175°C).

Grease a 9 x 13 baking dish with cooking spray or butter and set it aside for later use.
