Ingredients

  • 2 cups 2% low fat cottage cheese
  • 1 large can crushed pineapple, well drained
  • 1 small packet orange jello powder
  • 1 tub cool whip
  • 1 can mandarin oranges, drained

Step 1: Gather Your Ingredients

Begin by gathering all the necessary ingredients: 2% low-fat cottage cheese, a large can of well-drained crushed pineapple, one small packet of dry orange jello, one tub of Cool Whip, and drained canned Mandarin oranges.

Step 2: Combine the Base Ingredients

In a mixing bowl, combine the cottage cheese and the well-drained crushed pineapple.

Mix them together until they are well blended.

Step 3: Add the Jello Powder

Pour the dry orange jello powder into the mixture and stir until it is fully combined.

This will give the salad a lovely orange flavor and vibrant color.

Step 4: Fold in the Cool Whip

Gently fold in the tub of Cool Whip to the mixture.

Be careful to maintain the light and fluffy texture as you mix.

Step 5: Incorporate the Mandarin Oranges

Next, add the drained canned Mandarin oranges to the mixture and fold them in carefully, ensuring they are evenly distributed without breaking apart.

Step 6: Prepare to Chill

Transfer the mixture to a serving bowl for better presentation.

Cover the bowl with plastic wrap or a lid and refrigerate for about one hour to allow the salad to set.

Step 7: Garnish and Serve

After the salad has chilled, remove it from the fridge.

Optionally, decorate the top with extra Mandarin oranges or other fresh fruits for a prettier presentation.

Serve the salad in dessert cups or bowls.

Enjoy this delightful and refreshing light summer dessert or side dish!
