Ingredients

For the coffee mixture:

  • 1.5 cups strong brewed coffee
  • 0.5 tsp vanilla
  • 2 tbsp sugar

For the cottage cheese base:

  • 1 tsp vanilla (Rodelle is my go-to for baking)
  • 16 oz low-fat cottage cheese (2%)
  • 4 tbsp sugar

For the egg yolk mixture:

  • 2 tbsp sugar (granulated sugar works best here)
  • 2 large egg yolks

For assembly:

  • ladyfinger cookies (about 24-30 cookies, depending on size)
  • cocoa powder (unsweetened, for dusting)
  • 2 cups heavy cream (cold, for best whipping results)

Step 1: Prepare the Coffee Mixture

Start by stirring together 1 ½ cups of strong black coffee or espresso, 2 tablespoons of granulated sugar, and ½ teaspoon of vanilla extract in a bowl until the sugar is completely dissolved.

Pour this coffee mixture into a shallow dish and set it aside to cool.

 

Step 2: Process the Cottage Cheese

In a food processor, add 16 ounces of 2% cottage cheese and process on high speed until completely smooth, scraping down the sides as needed.

Add ¼ cup of granulated sugar and 1 teaspoon of vanilla extract, and process again until the sugar is fully incorporated.

Place this creamy mixture in the fridge while you prepare the remaining ingredients.

 

Step 3: Prepare the Double Boiler

Set up a double boiler by placing a glass or metal bowl over a saucepan filled with a bit of water (ensuring the bottom of the bowl does not touch the water).

Bring the water to a simmer to prepare it for the next steps.

 

Step 4: Cook the Egg Yolk Mixture

In the bowl of the double boiler, add 2 large egg yolks and the remaining 2 tablespoons of granulated sugar.

Whisk constantly until the mixture becomes pale, thickened, and no longer gritty, which takes about 10 minutes.

Once done, remove the bowl from the heat and continue whisking for a couple more minutes until the mixture is slightly cooled.

 

Step 5: Combine Egg Yolk Mixture with Cottage Cheese

Add the slightly cooled egg yolk mixture to the chilled cottage cheese mixture in the food processor.

Process again until the mixture is completely uniform and creamy.
