Ingredients
- 1 large egg (at room temperature for better emulsification)
- 2 tsp vanilla extract (I use Simply Organic vanilla extract)
- 1 tsp ground cinnamon
- 1/2 cup maple syrup
- 1/3 cup olive oil
- 1 tsp baking powder
- 1 cup grated zucchini
- 1/2 cup plain cottage cheese (full-fat for a moister crumb)
- 1/2 tsp salt (fine grain sea salt preferred)
- 1/2 tsp baking soda
- 1 1/2 cups flour
Step 1: Preheat Oven and Prepare Loaf Pan
Begin by preheating your oven to 350°F (175°C).
Grease a 9″x5″ loaf pan to ensure the bread doesn’t stick and sets properly.
Step 2: Mix Wet Ingredients
In a bowl, whisk together the following ingredients: olive oil, maple syrup, egg, cottage cheese, and vanilla.
Once thoroughly mixed, set the bowl aside.
Step 3: Combine Dry Ingredients
In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and cinnamon.
Ensure the dry ingredients are well-blended to achieve an even texture in the bread.
Step 4: Combine Wet and Dry Ingredients
Pour the wet ingredients into the bowl of dry ingredients.
Mix well until everything is fully combined and forms a smooth batter.
Step 5: Prepare and Add Zucchini
Use a paper towel to remove excess moisture from the shredded zucchini.
Fold the zucchini into the batter mixture gently until it is evenly distributed.
Step 6: Bake the Bread
Pour the batter into the greased loaf pan, spreading it evenly.
Bake in the preheated oven for 40-45 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
Step 7: Cool and Serve
Allow the bread to cool in the pan for a few minutes to set properly.
Then transfer it to a wire rack to cool completely.
