Hey there, friends!
Are you in the mood for some delicious baking? I’ve got a treat for you!
Today, I’m excited to share my recipe for Greek yogurt banana bread.
It’s moist, flavorful, and packed with protein!
Plus, it’s a great way to use up those overripe bananas sitting on your counter.
So grab your mixing bowl, and let’s whip up this tasty loaf together!
Preparation Time | 15-20 minutes |
Cooking Time | 45-65 minutes |
Total Time | 60-85 minutes |
Level of Difficulty | Medium |
Ingredients
- 1 cup mashed bananas (from 2 to 3 very ripe bananas)
- 1/2 cup vanilla greek yogurt
- 1 large egg
- 1 1/2 teaspoons vanilla essence
- 5 tablespoons melted coconut oil
- 2 generous tablespoons honey
- 1/2 cup packed light brown sugar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup all-purpose or white whole wheat flour
- 1 tablespoon corn starch
- 1/3 cup oat flour (made by blending oats)
Step 1: Prepare the Oven and the Bread Pan
Preheat your oven to 350℉.
Grease and flour an 8×4-inch bread pan to prevent the bread from sticking during baking.
Set the prepared pan aside.
Step 2: Mash the Bananas
Remove the skins from the bananas and place them in a large bowl.
Mash the bananas thoroughly with a fork until they reach a smooth consistency.
Step 3: Combine Wet Ingredients
In the same large bowl with the mashed bananas, add Greek yogurt, egg, vanilla extract, melted coconut oil, honey, and brown sugar.
Stir until all the ingredients are well combined and form a smooth mixture.
Step 4: Prepare the Flour Mixture
In a small bowl, measure out 1 cup of flour.
Remove 1 tablespoon of the flour and replace it with 1 tablespoon of cornstarch to create a lighter, cake-like flour.
Stir this mixture together.
Step 5: Mix Dry Ingredients
In another bowl, combine baking soda, salt, cinnamon, the flour/cornstarch mixture, and oat flour.
(To make oat flour, blend old-fashioned or quick oats in a blender until they resemble flour.
Measure the oat flour after blending.) Mix these dry ingredients together until evenly distributed.
Step 6: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
Be careful not to overmix, as this can result in a dense bread.
Step 7: Bake the Bread
Pour the combined batter into the prepared bread pan.
If desired, sprinkle 1-2 tablespoons of brown sugar on top for a nice crust.
Bake for 45-65 minutes, or until a fork inserted into the center comes out clean and the bread starts to pull away from the edges.
If the top of the bread is browning too quickly, you can tent it with foil.
Step 8: Cool and Serve
Once fully baked, remove the bread from the oven and allow it to cool in the pan for a few minutes.
Then, transfer it to a wire rack to cool completely before slicing and serving.
Enjoy!
