Ingredients
For the chicken:
- 3 boneless, skinless chicken breasts
- 1 tsp kosher salt
- black pepper to taste (freshly ground for best flavor)
For the marinade:
- 2 tbsp olive oil (good quality extra virgin)
- 1/2 tsp garlic powder
- 1/2 tsp thyme (dried, or 1 tsp fresh chopped)
- 1 cup plain Greek yogurt (full fat for creaminess, I like Fage Total)
- 1/2 tsp onion powder
- 1/3 cup fresh lemon juice (from about 1-2 lemons, fresh for brighter flavor)
- 6 garlic cloves (minced for even distribution)
For the topping:
- 3 tbsp panko breadcrumbs (for extra crispiness)
Step 1: Marinate the Chicken
Season the chicken breasts with salt and pepper in a large bowl.
Add in yogurt, lemon juice, minced garlic, olive oil, thyme, garlic powder, and onion powder.
Mix everything well to ensure the chicken breasts are thoroughly coated.
Cover the bowl with plastic wrap and let the chicken marinate in the fridge for 4-6 hours, or overnight for best results.
Step 2: Preheat the Oven and Prepare Baking Dish
Preheat the oven to 375°F (190°C).
Coat the bottom of a baking dish with olive oil to prevent the chicken from sticking.
Place the marinated chicken breasts in the baking dish, arranging them in a single layer.
Step 3: Add Toppings
Sprinkle Panko breadcrumbs on top of each chicken breast for added crunch.
If you prefer a bit more lemon flavor, you can place a lemon slice on top of each chicken breast before baking.
Step 4: Bake the Chicken
Bake the chicken in the preheated oven for 40-45 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
This ensures the chicken is cooked through and safe to eat.
Step 5: Rest and Serve
Remove the chicken from the oven and allow it to rest for 5-10 minutes before cutting.
This helps retain the juices and keeps the chicken moist.
