Ingredients
- 2 cups mini marshmallows (for a lighter, fluffier texture)
- 1 packet sugar-free orange gelatin (I use Jell-O brand)
- 8 oz nonfat whipped topping (thawed if frozen)
- 3 cups nonfat greek yogurt
- 15 oz mandarin oranges (drained well, optional: pat dry with paper towel)
- 20 oz crushed pineapple (drained very well)
Step 1: Beat the Greek Yogurt
Place nonfat Greek yogurt in the bowl of an electric mixer fitted with the whisk attachment.
Beat the yogurt on medium-high speed until it becomes light and fluffy, approximately 10 minutes.
Step 2: Incorporate the Jello
Add the Jello to the whipped yogurt and continue to beat until the powder is fully incorporated and the mixture is well blended.
Step 3: Mix in the Whipped Topping
Gently add the nonfat whipped topping to the yogurt and Jello mixture.
Use a spatula to stir until everything is combined smoothly.
Step 4: Add Fruits
Add the mandarin oranges and pineapple to the mixture.
Stir gently to distribute the fruits evenly throughout the mixture.
Step 5: Fold in the Marshmallows
Fold in the mini marshmallows carefully so that they are well integrated into the mixture without deflating the yogurt and whipped topping.
Step 6: Chill Before Serving
Transfer the mixture to a serving bowl and refrigerate for at least one hour before serving to allow the flavors to meld and the salad to firm up.
