Ingredients
For the brownies:

- 1/2 cup maple syrup (I use Coombs Family Farms maple syrup)
- 1/2 cup almond flour
- 1/4 tsp sea salt
- 2 tbsp neutral oil
- 1/2 cup dark chocolate chips
- 8 oz zucchini (grated and squeezed dry)
- 1 splash vanilla extract
- 1/2 cup cacao powder
- 1 tsp baking powder
For the frosting:
- 2 tbsp milk (or any dairy-free milk like almond milk)
- 1/2 cup dark chocolate chips
Step 1: Prepare the Wet and Dry Ingredients
Start by preheating your oven to 350°F (175°C).
Chop 8 ounces of zucchini (about one 8-inch zucchini) into coarse pieces.
In a food processor, combine the chopped zucchini, 2 tablespoons of neutral vegetable oil, 1/2 cup of maple syrup (or honey), 2 eggs, and a splash of vanilla extract.
Process until smooth, with some flecks of green remaining.
In a separate bowl, mix together your dry ingredients: gluten-free all-purpose flour (or regular all-purpose flour), almond flour, raw cacao powder (or cocoa powder), baking powder, and fine sea salt until well combined.
