It’s hearty, flavorful, and perfect for those cozy nights.
With just a few simple ingredients, you’ll whip up a dish that everyone will love.

Ingredients
- 1 pound ground beef or ground turkey
- 1 1/2 cups water
- 1 box (6.9 oz) spanish rice mix
- 1 can (10 oz) diced tomatoes with green chiles
- 1 can (15 oz) ranch style beans
- 1 1/2 cups frozen corn kernels
- 1 cup shredded mexican-style cheese blend
Step 1: Prepare and Brown the Beef
Turn the Instant Pot to the sauté setting.
Once the display reads HOT, add in the beef.
Break it up with a spatula and brown it for about 5 minutes.
After the beef is browned, drain off any excess grease.
Lightly salt and pepper the meat to taste.
Step 2: Add Water and Prepare for Pressure Cooking
Pour in water and use a spatula to scrape the bottom of the pot to ensure no bits are sticking.
This helps prevent the burn warning during pressure cooking.
Turn off the Instant Pot.
Step 3: Add Remaining Ingredients
Sprinkle in the contents of the Zatarain’s box.
Then, dump in the Rotel, ranch beans, and corn on top of the beef mixture.
Do not stir.
Step 4: Pressure Cook
Cover the Instant Pot and secure the lid.
Make sure the valve is set to sealing.
Set the manual/pressure cook button to 3 minutes.
Once the cooking time is up, let the pot sit for 10 minutes for a natural pressure release.
After 10 minutes, move the valve to venting to release any remaining pressure.
Carefully remove the lid once the pressure has fully released.
Step 5: Stir in Cheese and Serve
Stir in the cheese until it’s fully melted and incorporated.
Serve hot and enjoy your delicious meal!
