Today, I’m excited to share my favorite Ozark casserole.
This dish is loaded with flavor and will warm you right up.
It’s perfect for family dinners or meal prep for the week.

Ingredients
For the casserole:
- 1 cup chopped onion (finely chopped for even cooking)
- 1/2 tsp onion powder
- 1/2 cup long grain white rice
- 3/4 cup chicken broth (low-sodium preferred)
- 1/3 cup heavy cream
- 1 tsp dijon mustard
- 1/2 tsp poultry seasoning
- 1 tbsp lemon juice (freshly squeezed for brighter flavor)
- 1 tsp garlic powder
- 3 boneless, skinless chicken thighs (cubed into 1-inch pieces)
- 1 stalk chopped celery
- 2 tbsp butter
- 1 tsp black pepper (freshly ground for best flavor)
- 1/2 tsp kosher salt
For the topping:
- 1 pkg chicken stuffing mix (Pepperidge Farm is a good choice)
Step 1: Saute the Vegetables
Turn the Instant Pot to the saute setting.
When the display says HOT, add in the butter and let it melt.
Add the chopped onion and celery, and saute for 4 minutes.
Once done, turn off the Instant Pot.
Step 2: Add Chicken and Seasonings
Stir in the chicken pieces, along with salt, pepper, poultry seasoning, garlic powder, and onion powder.
Make sure the chicken is well-coated with the seasonings.
Step 3: Add Liquids and Rice
Pour in the chicken broth and scrape the bottom of the pot to ensure nothing is sticking.
Sprinkle in the rice evenly over the top.
Add in the lemon juice and dijon mustard, but do not stir.
Step 4: Pressure Cook
Cover the Instant Pot and secure the lid.
Make sure the valve is set to sealing.
Set the manual/pressure cook button to 3 minutes.
Once the cooking time is up, let the pot sit for 10 minutes to naturally release pressure.
After the 10 minutes, move the valve to venting to release any remaining pressure.
Carefully remove the lid.
Step 5: Add Cream and Stuffing Mix
Stir in the cream and the stuffing mix.
Replace the lid and let the pot sit on the warm setting for 5-10 minutes to allow the stuffing mix to absorb the liquid and flavors.
Step 6: Serve and Enjoy
Once everything is well-incorporated and the stuffing mix has softened, serve the dish hot.
