Easy Pork Chop Casserole Recipe

Ingredients

  • 1 lb thin pork chops
  • 2 medium onions
  • 6 potatoes
  • 4 oz cheddar cheese
  • 4 oz havarti or gouda cheese
  • 4 oz parmesan cheese
  • 0.5 cup mayonnaise
  • 1 cup sour cream
  • Salt to taste
  • Pepper to taste
  • Oregano to taste
  • Smoked paprika to taste
 

Step 1: Preheat and Prepare Pork Chops

Preheat your oven to 350°F (175°C).

Take thin boneless pork chops and use a meat hammer to pound them until they are thin.

Season the pork chops with salt, pepper, and oregano.

In a metal or glass baking dish, layer the seasoned pork chops.

 

Step 2: Add Onion Layer

Slice two medium onions fairly thin and layer them over the seasoned pork chops.

Season the onion layer with salt, pepper, and oregano for added flavor.

 

Step 3: Slice and Layer Potatoes

Using a mandolin or a knife, cut six potatoes into uniform paper-thin slices.

If you don’t have a mandolin, you can use a potato peeler to remove the skin and then slice the potatoes thinly.

Layer the sliced potatoes evenly over the onion layer.

 

Step 4: Prepare and Apply Cheese Mixture

In a bowl, mix together 4 oz of cheddar cheese, 4 oz of Havarti or Gouda cheese, and 4 oz of Parmesan cheese.

Add 0.5 cup of mayonnaise and 1 cup of sour cream to the cheese mixture.

Season the mixture with additional salt, pepper, and oregano, then mix well.

Spread the cheese mixture evenly over the potato layer.

Finish off with a sprinkle of black pepper and smoked paprika on top.

 

Step 5: Bake the Casserole

Place the casserole in the preheated oven and bake for approximately 1 hour.

Check to ensure the cheese layer becomes dark but not burned.

If the potatoes are still hard after 1 hour, reduce the oven temperature to 300°F (150°C) and cook for an additional 15-20 minutes.

 

Step 6: Let Set and Serve

After baking, let the casserole set for a few minutes before serving to avoid excess moisture.
