Easy Pumpkin Hand Pies

Ingredients

  • 1 large egg
  • 1 cup pumpkin puree
  • 1/4 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1 package of refrigerated pie crust or homemade pie crust (double)
  • 1 large egg (slightly beaten)
  • 1 tablespoon raw sugar
  • 1/2 teaspoon ground cinnamon

Step 1: Prepare the Pumpkin Mixture

Preheat your oven to 400°F.

In a small bowl, beat 1 egg.

Add in the pumpkin, sugar, and pumpkin spice.

Stir everything well to combine.

Place the mixture in the refrigerator until you’re ready to use it.

Step 2: Roll and Cut the Pie Crust

On a lightly floured surface, unroll your pie crust.

If using homemade crust, ensure the dough is rolled out to be between 1/8-1/4 inch thick.

Use a cutter to cut the dough into circles.

Gather the dough scraps, re-roll them, and cut out additional circles until all the dough is used.

Step 3: Fill and Seal the Mini Pies

Place a small dollop of the pumpkin mixture on each circle.

Leave about a 1/3-inch border around the edge.

Fold each circle in half to form a semi-circle.

Seal the edges by pinching them together with your fingers or use a fork to crimp the edges.

If the edges aren’t sticking together well, lightly moisten them with the beaten egg before sealing.

Step 4: Add Egg Wash and Cinnamon-Sugar

In a small bowl, mix together some sugar and cinnamon.
