It’s loaded with fall flavors and a hint of sweetness, perfect for those cozy mornings.
Plus, it’s super easy to whip up! You’ll want to sprinkle it on everything.
Let’s dive in and make some tasty granola together!
Preparation Time | 10-15 minutes |
Cooking Time | 23-33 minutes |
Total Time | 33-48 minutes |
Level of Difficulty | Easy |
Ingredients
- 3 cups rolled oats (use gluten-free if needed)
- 1 1/4 cups raw pecans
- 1/3 cup raw pumpkin seeds (pepitas)
- 3 tablespoons sugar
- 1/4 teaspoon sea salt
- 3/4 teaspoon pumpkin pie spice (plus a dash of cinnamon if desired)
- 1/4 cup coconut oil or olive oil
- 1/3 cup maple syrup (or substitute with agave or honey if not vegan)
- 1/3 cup pumpkin puree
Step 1: Preheat the Oven
Preheat your oven to 340 degrees F (171 C) to prepare for baking the granola.
Step 2: Mix the Dry Ingredients
In a large bowl, mix together your oats, nuts, seeds, spices, sugar, and salt.
Ensure all the dry ingredients are well combined.
Step 3: Prepare the Wet Ingredients
In a small saucepan over medium-low heat, warm the coconut oil, maple syrup, and pumpkin puree.
Whisk these ingredients until they are well combined and smooth.
Pour the wet mixture over the dry ingredients and quickly mix using a wooden spoon to ensure everything is evenly coated.
Step 4: Spread and Bake the Granola
Spread the granola mixture evenly onto two baking sheets (or bake in two batches if necessary).
Place the baking sheets in the preheated oven and bake for 23-33 minutes.
Stir the granola a bit near the halfway point to ensure even cooking.
If you prefer chunkier granola, avoid stirring and simply rotate the pans halfway through the baking time.
Step 5: Cool the Granola
Once the granola turns golden brown (after approximately 25 minutes), remove it from the oven and allow it to cool completely.
The granola will crisp up as it cools.
Step 6: Store and Enjoy
Transfer the cooled granola to an airtight container.
The granola should stay fresh for a couple of weeks.
Enjoy your homemade granola with almond milk, dairy-free yogurt, or as a topping on oats!
