Ingredients
For the crust:
- 1/4 cup melted butter (I like using Kerrygold unsalted butter for this)
- 24 Oreo cookies (finely crushed for an even crust)
For the filling:
- 2 large eggs (room temperature for better emulsification)
- 1 tbsp pumpkin pie spice (for best flavor and aroma)
- 1 pinch salt
- 1 1/2 cups milk or cream (half-and-half works great for richness)
- 2 cups pumpkin puree (I use Libby’s pumpkin puree)
- 1/2 cup granulated sugar
Step 1: Prepare the Oven and Crush Oreos
Preheat your oven to 450ÂșF (232ÂșC).
Meanwhile, place the Oreos in a gallon-sized ziptop bag.
Press all the air out of the bag and seal it well.
Use a rolling pin to crush the cookies until all large chunks are gone.
Step 2: Combine Oreo Crumbs with Butter
Open the bag with crushed Oreos and pour in the melted butter.
Seal the bag again and âsmushâ the butter and the Oreos together until well incorporated and the mixture resembles wet sand.
Step 3: Form the Oreo Crust
Press the Oreo crumbs into a 9-inch pie dish, using your hands or the bottom of a cup to press the mixture evenly across the bottom and slightly up the sides.
Itâs fine if the crust doesnât come all the way up the sides of the dish.
Step 4: Prepare and Add Pumpkin Pie Filling
Whisk together all of the pumpkin pie filling ingredients until smooth.
Pour the filling into the prepared Oreo pie crust, spreading it out evenly with a spatula if needed.
Step 5: Bake the Pie
Bake at 450ÂșF (232ÂșC) for 10 minutes.
After 10 minutes, reduce the oven temperature to 400ÂșF (204ÂșC) and continue baking for another 30 minutes.
Once done, turn off the oven and crack the oven door open, allowing the pie to cool slowly in the oven.
Step 6: Chill and Serve
After the pie has cooled in the oven, move it to the fridge to chill until ready to serve.
