Today, I’m sharing my favorite pumpkin pie recipe, complete with a flaky puff pastry crust.
It’s creamy, spiced just right, and the crust? Totally to die for!
Perfect for cozy fall days or holiday gatherings.

Ingredients
For the crust:
- 100 gr butter (melted and cooled slightly)
- 1 package phyllo dough (12 sheets)
For the filling:
- 700 gr pumpkin (peeled and grated)
- 2 tbsp sugar
- 1 medium onion (finely chopped)
- salt
- black pepper (freshly ground for best flavor)
Optional seasonings/vegetables:
- carrots
- garlic (minced)
- hot peppers
- 20 gr butter
- parsley (freshly chopped)
- bell pepper
- potatoes
- thyme
Step 1: Prepare Ingredients
Gather your ingredients: 1 pack of Phyllo (Filo) Dough (400 g, 12 sheets), 700 g of pumpkin, 1 medium onion, 100 g of butter, 2 tablespoons of sugar, salt, and black pepper.
Grate the pumpkin and finely chop the onion.
Step 2: Make the Filling
In a large bowl, combine the grated pumpkin, chopped onion, 2 tablespoons of sugar, a pinch of salt, and some black pepper.
Mix well until everything is uniformly combined.
Step 3: Prepare the Phyllo Dough
Take each rectangular sheet of Phyllo dough and cut it into a square if needed.
Melt 100 g of butter.
Brush each sheet of Phyllo dough with the melted butter.
Divide the pack of Phyllo dough into 2 equal parts.
Step 4: Assemble the Pies
Take the first half of the Phyllo dough and place half of the filling mixture onto it.
Fold the dough over the filling to create a pie.
Repeat this process with the second half of the dough and the remaining filling.
Step 5: Prepare for Baking
Grease the tops of the pies with the remaining melted butter.
Preheat your oven to 200°C (390°F).
Step 6: Bake the Pies
Once the oven is preheated, place the pies onto a baking sheet.
Bake for 50 minutes, or until the Phyllo dough is golden and crispy.
Remove from the oven and let them cool slightly before serving.
