Today, I’m excited to share my pumpkin pie yellow cake recipe.
It’s the perfect blend of rich pumpkin flavors and moist yellow cake. Trust me, it’s a slice of autumn heaven!

Ingredients
For the crust and topping:
- 1/4 cup butter (melted and cooled)
- 1 egg
- 1 pkg yellow cake mix (I use Duncan Hines Moist Deluxe)
For the filling:
- 1 tsp ground ginger
- 2 tsp ground cinnamon (for best flavor and aroma)
- 29 oz pumpkin puree (I use Libby’s pumpkin puree)
- 1 1/2 cups granulated sugar
- 4 eggs
- 1 tsp salt
- 17 oz evaporated milk (makes it extra creamy and rich)
- 1/2 tsp ground cloves
Step 1: Prepare the Crumb Mixture
Preheat your oven to 350°F (175°C).
In a saucepan or microwave-safe container, heat the butter until it is just melted but not hot.
Whisk in one egg into the cooled melted butter.
Add the yellow cake mix and mix with a fork until the mixture resembles coarse crumbs.
Step 2: Create the Crust
Grease a 9×13-inch baking pan.
Sprinkle half of the crumb mixture evenly into the bottom of the pan, pressing it down lightly to form the base.
Set aside the remaining crumb mixture for the topping.
Step 3: Prepare the Pumpkin Filling
In a large bowl, beat the remaining four eggs.
Stir in the pumpkin puree until well combined.
In a small bowl, mix together the sugar and spices, then incorporate this mixture into the pumpkin and eggs.
Gradually stir in the evaporated milk, half a can at a time.
Step 4: Assemble and Bake the Pumpkin Bars
Pour the pumpkin mixture over the crust in the prepared pan, spreading it out evenly.
Sprinkle the remaining crumb mixture evenly over the top.
The pan will be quite full, so handle it with care.
Bake in the preheated oven for 60-70 minutes.
You’ll know it’s done when a knife inserted near the edge comes out clean, though the center may still be soft.
Step 5: Cool and Serve
Allow the pumpkin bars to cool completely in the pan.
Once cooled, chill them in the refrigerator before serving.
For an extra special treat, serve with whipped cream or cool whip on top.
