Today, I’m excited to share my favorite recipe for tomato soup that’s perfect for canning.
It’s rich, flavorful, and you can enjoy it all year round.
Plus, there’s nothing quite like homemade soup on a chilly day!

Ingredients
For the soup:
- 1 cup diced yellow onion
- 3 tbsp tomato paste
- 1/2 cup filtered water
- 3 tbsp brown sugar
- 7 lb tomatoes (ripe, good quality for best flavor)
- 2 tsp granulated garlic
- 1 1/2 tsp salt (fine sea salt is preferred)
- 1/2 tsp black pepper (freshly ground for better aroma)
- 2 bay leaves
- 1 tsp celery seed
- 2 tsp dried basil
- 1 tbsp dried oregano
For canning (per pint jar):
- 1 tbsp lemon juice (bottled lemon juice is required for canning safety) or 1/4 tsp citric acid
For canning (per quart jar):
- 2 tbsp lemon juice (or 1/2 tsp citric acid)
Step 1: Prepare and Cook the Tomatoes
Quarter the tomatoes and dice the onion.
Place them in a large soup pot along with ½ cup of water.
Cook uncovered for 30 minutes to 1 hour, stirring occasionally, until the tomatoes are very soft.
Step 2: Puree the Tomatoes
Remove the pot from heat and let the tomatoes cool slightly.
Working in batches, transfer the warm tomatoes to a food processor, blender, or food mill to puree.
If desired, press the tomato puree through a fine-mesh sieve to remove any seeds and skins.
Pour the smooth tomato puree back into the large soup pot.
Step 3: Season the Puree
Add the tomato paste, brown sugar, dried oregano, dried basil, bay leaves, granulated garlic, salt, celery seed, and black pepper to the puree.
Do not add the lemon juice or citric acid yet.
Stir to combine.
Step 4: Simmer the Soup
Bring the seasoned tomato puree to a simmer.
Cook until it has reduced to your desired thickness, which may take about 1 hour.
While the soup is simmering, wash the canning jars and keep them warm.
Prepare the water bath canner during this time.
Step 5: Final Touches
Once the soup has reached the desired thickness, taste it and adjust the salt as needed.
Add 1 tablespoon of lemon juice to each jar before canning to ensure acidity levels are safe.
