Ingredients
For the cupcakes:
- 1 large egg
- 1/2 tsp ground ginger
- 350 °F
- 1/3 cup molasses (I use Brer Rabbit full flavor)
- 1/2 tsp baking soda
- 1 tsp banking powder
- 1/2 tsp ground allspice
- 1/2 cup whole milk
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter (softened to room temperature)
- 1/2 cup packed brown sugar
For the frosting:
- 4 oz cream cheese (softened)
- 1/2 cup unsalted butter (for a richer, creamier frosting)
- 2 cups powdered sugar
- 2 tbsp molasses
For the garnish:
- festive sprinkles or candies (optional, for a festive touch)
Step 1: Combine Dry Ingredients
In a small bowl, mix together the flour, baking powder, baking soda, ginger, allspice, nutmeg, and cinnamon.
Stir until well combined, then set aside.
This will be your dry ingredient mixture.
Step 2: Prepare Wet Ingredients
In a large bowl, use an electric mixer to beat the butter and brown sugar together until creamy and smooth.
Add in the egg, molasses, and milk, and beat again until everything is fully combined.
Step 3: Mix Wet and Dry Ingredients
Gradually add your dry ingredient mixture to the wet mixture.
Start by adding half of the dry ingredients and beat until combined.
Then add the remaining dry ingredients and continue to beat until the batter is fluffy and smooth.
