Soft tofu can be replaced with firm tofu or tempeh for a meatier texture. Drain and press the tofu or tempeh well before mashing. This substitution maintains protein content while offering a different mouthfeel.
Quick oats can be swapped with rolled oats or quinoa flakes for added nutrition and texture. If using rolled oats, pulse them briefly in a food processor for a finer consistency. Quinoa flakes provide a gluten-free option with complete protein.
Seasoned breadcrumbs can be substituted with almond meal or crushed pork rinds for a low-carb, gluten-free alternative. Adjust seasonings as needed, as these options may be less flavored than seasoned breadcrumbs. Use slightly less almond meal or crushed pork rinds, as they are denser than breadcrumbs.

Ingredients
For the patties:
- 1 1/2 cups mashed soft tofu
- 1 tbsp vegetable bouillon paste (I use Better Than Bouillon)
- 1/2 cup seasoned breadcrumbs
- 1/2 cup grated carrots (finely grated for better binding)
- 1/2 cup quick oats (such as Quaker)
- 1 tsp garlic powder
- 1/3 cup chopped onions
For cooking:
- 2 tbsp avocado oil
Step 1: Sauté the Vegetables
Heat a large skillet over medium heat and add 1 tablespoon of avocado oil.
Once the oil is hot, add the chopped onion and sliced carrots to the skillet.
Sauté these vegetables until they become tender, stirring occasionally to ensure even cooking.
Once tender, stir in the garlic powder and bouillon concentrate, mixing well to evenly coat the vegetables with the seasonings.
Step 2: Prepare the Patty Mixture
In a large mixing bowl, combine the mashed tofu, quick oats, breadcrumbs, and the sautéed onion and carrot mixture.
Mix everything together thoroughly until all the ingredients are well integrated and can hold together when formed.
Step 3: Form and Cook the Patties
Take portions of the mixture and form them into patties of your desired size.
Add the remaining avocado oil to the skillet, heating it up over medium heat.
Once hot, place the patties into the skillet.
Fry the patties until they are browned and warmed through, turning them once to ensure even cooking on both sides.
If needed, add more avocado oil to the skillet to help with frying.
Step 4: Serve the Patties
Once the patties are cooked to a golden brown and are heated through, remove them from the skillet and let them cool for a moment before serving.
