Today, I’m excited to share a recipe for Christmas cookies that are diabetic-friendly.
These cookies are delicious and festive, plus they won’t spike your blood sugar.

Ingredients
For the cookies:
- 1 tsp mint extract
- 1/2 tsp salt
- 1/4 cup unsweetened cocoa powder
- 1 3/4 cups almond flour
- 1/2 cup confectioners sugar substitute (I prefer Swerve confectioners)
- 1 egg
- 1/2 cup softened butter (room temperature, about 68-70°F, for easy creaming)
For the coating:
- 1 cup confectioners sugar substitute

Step 1: Cream Butter and Sweetener
In the bowl of a KitchenAid Mixer, beat the softened butter for a few minutes until creamy.
Then add the Swerve Confectioner’s Sugar and continue to beat until fully combined and fluffy.
Step 2: Mix in Egg and Mint Extract
Next, add the egg and mint extract to the mixer bowl.
Beat for another minute or two until the mixture is smooth and well-integrated.
Step 3: Combine Dry Ingredients and Form Dough
In a separate bowl, combine the almond flour, salt, and cocoa powder.
Slowly add this dry mixture to the butter, sugar, and egg mixture in the KitchenAid Mixer.
Beat until the dough begins to come together.
If the dough is too dry or not coming together, add a tablespoon of water at a time until it achieves a cohesive consistency.
Step 4: Shape and Bake the Cookies
Roll the dough into 1 inch-sized balls and place them on baking sheets lined with parchment paper.
Preheat your oven to 325°F.
Bake the cookie balls in the oven for 12 minutes or until they are firm to the touch.
Remove from the oven and let them cool for about 5 minutes.
Step 5: Coat in Sweetener and Serve
Place about 1/2 cup more of Swerve Confectioner’s Sugar in a shallow bowl.
Roll the slightly cooled cookies in the sweetener to coat them.
Allow them to cool completely before serving.
