Use about 2 teaspoons of agar-agar per cup of liquid, and follow package instructions for preparation. This plant-based alternative provides a similar gel-like consistency. Whole berry cranberry sauce can be substituted with homemade cranberry compote for those preferring less sugar or fresh ingredients. Simmer fresh cranberries with orange juice and a sweetener of choice until thickened. Whipping cream can be replaced with coconut cream for a dairy-free version. Chill a can of full-fat coconut milk overnight, then scoop out the solidified cream and whip it with sugar as you would dairy cream. This alternative offers a subtle coconut flavor while maintaining a creamy texture.

Ingredients
For the gelatin salad:
- 1 can whole berry cranberry sauce (I use Ocean Spray)
- zest from 1 orange (finely grated)
- 1 can crushed pineapple in juice (undrained for full flavor)
- 6 oz raspberry gelatin
- non-stick cooking spray (for easy unmolding)
For the topping:
- fresh cranberries
- 2 tbsp sugar
- 1/2 cup whipping cream
- mint leaves
- orange zest
Step 1: Prepare the Mold and Dissolve the Gelatin
Start by spraying a 6 cup gelatin mold or a 9-inch square pan with cooking spray to ensure easy release later.
In a large bowl, place the raspberry gelatin and add 1 cup of boiling water.
Stir or whisk until the gelatin is completely dissolved.
Add 1/2 cup of cold water to the dissolved gelatin and stir to combine.
Step 2: Add Fruits and Flavorings
To the gelatin mixture, add the pineapple with its juice, cranberry sauce, and a dash of orange zest.
Stir until everything is well incorporated.
Pour the gelatin mixture into the prepared mold or pan.
Cover with plastic wrap to prevent any flavors from affecting the dessert while it sets.
Step 3: Chill the Gelatin
Refrigerate the gelatin for at least 6 hours or until it is fully set.
It’s important to let it firm up completely to maintain its shape when unmolded.
Step 4: Unmold the Gelatin
When ready to serve, submerge the bottom 2/3rds of the mold in very hot water for about 30 seconds to loosen it.
Carefully place your serving platter on top of the open part of the mold and flip it over.
If the gelatin doesn’t release immediately, you may need to repeat the hot water dip until it comes out smoothly.
Once unmolded, return the gelatin mold to the refrigerator until service time.
Step 5: Prepare Whipped Cream and Garnish
Right before serving, if you’re using whipped cream, prepare it by beating cream with a mixer until stiff peaks form, approximately 3-4 minutes.
Add a touch of sugar and beat for an additional 30 seconds.
Gently place the whipped cream on top of the gelatin.
Garnish with cranberries, mint sprigs, and a little more orange zest to enhance its festive appearance.
