It’s light, creamy, and packed with flavor. Plus, it’s a fantastic way to sneak in some extra veggies.

Ingredients
For the spaghetti squash:
- salt, to taste
- black pepper, to taste (freshly ground for best flavor)
- 1 spaghetti squash (about 3 lbs, cut in half lengthwise)
- 1 tbsp olive oil (I use California Olive Ranch for its mild flavor)
For the cheese mixture:
- 1/2 cup grated mozzarella cheese (whole milk preferred for better melt)
- 3 cloves garlic (finely minced or crushed)
- 1/2 tsp crushed red pepper flakes (for a touch of heat)
- 1/2 cup low-fat cottage cheese
- 1 tbsp Italian seasoning
- 1/2 cup grated Parmesan cheese
For garnish:
- fresh basil leaves (roughly torn or chopped)
Step 1: Prepare the Spaghetti Squash
Start by using a fork to pierce holes in a straight line lengthwise on the spaghetti squash from the top to the bottom.
Microwave the squash for about 2 minutes to soften it.
Be cautious, as it may be hot when you remove it from the microwave.
Step 2: Cut and Clean the Squash
Using a sharp knife, slice the squash in half lengthwise, following the pierced holes.
Leave the stem on to help create longer noodles.
Scoop out the seeds from each half of the squash using a spoon, ensuring the inside is clean and ready for cooking.
Step 3: Season and Air Fry the Squash
Preheat your air fryer to 360°F (182°C).
Brush each half of the squash with olive oil and sprinkle with salt and black pepper.
Place the squash halves in the air fryer basket, making sure they are spaced apart and not overlapping.
Air fry the squash for about 22-25 minutes until the flesh is tender.
Step 4: Prepare the Cheese Mixture
While the squash is cooking, combine the Parmesan, mozzarella, cottage cheese, garlic, Italian spice blend, and red pepper flakes in a medium mixing bowl.
Mix well until all ingredients are thoroughly combined.
Step 5: Add Cheese Mixture and Final Air Fry
Once the squash is browned and tender, spread an even layer of the cheese mixture along the inside of each half.
Increase the air fryer temperature to 400°F (204°C) and air fry for an additional 3-5 minutes, until the cheese is melted and golden brown.
Step 6: Serve and Enjoy
Carefully remove the squash halves from the air fryer, as they will be hot.
Let them cool for a minute before serving.
