Ingredients
- 1 cup frozen peas and carrots (I use Birds Eye mixed vegetables)
- 1 lb ground chicken
- 1/2 tsp salt
- 4 cups cooked rice (day-old white or brown rice works best)
- 2 tbsp sesame oil (toasted for more flavor)
- 3 tbsp soy sauce
- 2 tbsp vegetable oil (or neutral oil like canola)
- 3 green onions (sliced, white and green parts separated)
- 3 large eggs (beaten lightly)
- 1 tsp black pepper (freshly ground is best)
Step 1: Cook the Ground Chicken
In a large skillet, heat the sesame oil and vegetable oil over medium-high heat.
Add the ground chicken and sauté for approximately 4-6 minutes until the chicken is cooked through.
Once done, transfer the chicken to a separate plate and set aside.
Step 2: Sauté the Vegetables
In the same skillet, add the frozen peas and carrots blend.
