Hey, friends!
Who’s ready for a fun twist on a classic?
Today, I’m excited to share my recipe for veggie ground chicken nuggets.
These little bites are packed with flavor and a twist of healthy goodness.
They’re perfect for dipping or just snacking on the go.
Trust me, you’ll want to add this to your meal prep! Let’s jump in!

Possible Ingredient Alternatives
For the minced chicken, ground turkey can be used as a leaner alternative with a similar texture and mild flavor. This substitution maintains the protein content while reducing fat. Plant-based options like textured vegetable protein (TVP) or crumbled firm tofu can work for vegetarian or vegan diets, though additional seasoning may be needed. The cauliflower florets can be replaced with broccoli florets or chopped zucchini for a different nutrient profile while maintaining moisture and bulk. These vegetables can be finely chopped or pulsed in a food processor to achieve a similar texture. Bread crumbs can be substituted with crushed pork rinds for a low-carb option, or almond flour for a gluten-free alternative. Adjust the quantity as needed to achieve the right binding consistency, as these alternatives may absorb moisture differently than traditional bread crumbs.

Estimated Nutrition
Estimated nutrition for the whole recipe (without optional ingredients):
- Calories: 900-1000
- Protein: 85-95 g
- Fat: 40-50 g
- Carbohydrates: 80-90 g
Ingredients
- 2 cups cauliflower florets
- 1 tsp garlic powder
- 2 tsp Italian seasoning
- 1 lb ground chicken (I use Perdue 92% lean ground chicken)
- 1 medium carrot
- 2/3 cup bread crumbs (Panko bread crumbs often give a crispier texture)
Step 1: Preheat and Prepare Vegetables
Start by preheating your oven to 375 degrees Fahrenheit.
While the oven is heating up, take cauliflower and carrots, and add them to a food processor.
Process until they are finely chopped, creating a uniform mixture that can easily be incorporated into the nugget mixture.
Step 2: Mix the Ingredients
In a large bowl, add the finely chopped cauliflower and carrots along with all other ingredients except for the breadcrumbs.
Mix everything together until well combined.
This should result in a cohesive mixture that can easily be shaped into nuggets.
Step 3: Form the Nuggets
Scoop about 1 tablespoon of the vegetable mixture and use your hands to form it into a ball.
Once shaped, roll each ball in a large raised plate or bowl filled with breadcrumbs, ensuring an even coating on all sides.
Then, flatten each ball slightly to create a nugget shape.
Step 4: Prepare for Baking
Line a baking tray with parchment paper to prevent sticking.
Place the shaped nuggets onto the lined baking tray.
If desired, spray the top of each nugget lightly with oil spray to help achieve a crispier texture during baking.
Step 5: Bake the Nuggets
Place the baking tray in the preheated oven and bake the nuggets for 20-25 minutes.
Make sure to flip the nuggets halfway through the baking process to ensure even cooking and browning on both sides.
Step 6: Serve and Enjoy
Once the nuggets are golden brown and cooked through, remove them from the oven.
Allow them to cool slightly before serving.
These delicious vegetable nuggets are perfect as a snack or addition to a meal.
Enjoy!
