  1. It says to mix equal parts of water and flour for the first part but the recipe calls for 1/2 c water and 1/4 c flour. Which is it?

    • I am wondering the same – did they ever get back to you? What did you end up doing? I found another website calling for 1:5 flour to water BY WEIGHT to make a tangzhong (or water roux). 1/2 cup of water is 120g; 1/4 cup of flour is 30g…just over a 1:5 ratio.
