- 1 can cream-style corn
- 1 tsp sea salt
- 1 lb lean ground beef
- 1 can Ro-Tel diced tomatoes and green chilies (original flavor)
- 1 cup shredded sharp cheddar cheese
- 1/4 tsp red pepper flakes
- 1/4 tsp dried oregano
- 1/4 tsp garlic seasoning
- 1 can whole kernel corn
- 1 1/2 tsp cumin
For the cornbread topping:
- 2 2/3 cups milk
- 1/2 cup sour cream (full-fat for richness)
- 2 boxes Jiffy corn muffin mix
- 2 eggs
For assembly and garnish:
- 6 cherry tomatoes (quartered)
- chopped fresh cilantro (for garnish)
- sliced black olives (optional, for a briny taste)
- 2 cups shredded sharp cheddar cheese
- 2 green onions (chopped)
Step 1: Preheat and Prepare the Dish
Preheat your oven to 400°F (204°C).
Lightly grease a 13 x 9-inch casserole dish, ensuring it’s well coated to prevent sticking later on.
