Ingredients
- 1 can black beans (rinsed and drained well)
- 16 oz cottage cheese (small curd for a smoother dip)
- 2 tsp sriracha hot sauce
- 1 can corn
- 2 small tomatoes, chopped (Roma or cherry tomatoes work well)
- 1 large avocado (ripe but still firm)
- 1 minced jalapeño (remove seeds for less heat)
- 0.5 to 1 tsp garlic salt
- chopped cilantro (to taste, for garnish)
- 3-4 green onion tops, diced
Step 1: Blend Cottage Cheese and Avocado
Combine cottage cheese and avocado in a food processor and blend until smooth.
If you do not have a food processor or blender, you can mash the avocado and mix it with the cottage cheese in a medium bowl for a chunkier texture.
Step 2: Mix with Additional Ingredients
Transfer the blended cottage cheese and avocado mixture to a medium bowl.
Add black beans, corn, chopped tomatoes, minced jalapeño, diced green onions, Sriracha sauce, and garlic salt to the bowl.
Stir to combine all ingredients thoroughly.
Step 3: Adjust Seasoning
Taste the mixture and adjust seasoning with additional garlic salt or regular salt if needed.
Mix well to ensure even distribution of the seasoning.
Step 4: Garnish and Serve
Transfer the dip to a serving bowl and garnish with chopped fresh cilantro if desired.
