Ingredients
- 3/4 cup thawed chopped spinach
 - 1 tbsp chopped parsley (freshly chopped for best flavor)
 - 1/2 tsp ground cumin (for warmth and aroma)
 - 10 g Parmesan cheese (finely grated)
 - 1/2 tsp grated lemon zest
 - 1 celery stalk (diced into 1/4-inch pieces)
 - 2 original Ryvita crispbreads
 - 1/3 cup plain cottage cheese
 
Step 1: Prepare the Spinach
Start by squeezing the thawed spinach between two pieces of paper towel to remove any excess water.
This helps prevent your mixture from becoming too watery.
Step 2: Mix the Ingredients
Transfer the prepared spinach to a bowl.
Stir in the cottage cheese, diced celery, chopped parsley, finely grated lemon rind, and ground cumin until well combined.
Step 3: Assemble the Crispbreads
Spoon the spinach mixture evenly onto two Ryvita crispbreads, spreading it out to cover the surface.
This creates a tasty and nutritious base for your snack.
