Today, I’m excited to share my zucchini roll-ups with cottage cheese.
They’re light, fresh, and packed with flavor. Plus, they’re super easy to whip up!
These little bites of goodness are perfect for parties or just a tasty light lunch.

Ingredients
For the zucchini:
- 2 tsp olive oil
- 2 large zucchinis
- 1/4 tsp kosher salt
- 1/2 tsp black pepper
For the filling and sauce:
- 10 oz frozen spinach (thawed and squeezed dry)
- 1 1/3 cups cottage cheese (I like Daisy brand)
- 3 tbsp grated parmesan cheese
- 3/4 cup marinara sauce (pre-made for convenience)
- 1 large egg
- 8 tbsp shredded mozzarella cheese (part-skim for less fat)
- 2 tbsp Italian seasoning
- 1 tbsp garlic powder
Step 1: Preheat the Oven and Prepare the Zucchini
Preheat your oven to 425°F (220°C).
While the oven is heating, slice the zucchini lengthwise into super thin strips, about ⅛ inch thick.
This can be done using a mandoline slicer or a sharp knife for precision.
Step 2: Season and Bake the Zucchini
In a large mixing bowl, toss the zucchini strips with olive oil, salt, and ground black pepper to coat them evenly.
Arrange the seasoned zucchini in a single layer on two large rimmed baking sheets to ensure they roast properly.
Bake the zucchini for 10 minutes, turning once halfway through baking.
Once done, remove the zucchini from the oven and set aside to cool slightly.
Step 3: Mix the Cheese Filling
In a small bowl, combine 2 tablespoons of shredded mozzarella and 1 tablespoon of grated Parmesan cheese, and set it aside as topping.
In a medium mixing bowl, mix together the egg, cottage cheese, thawed spinach (make sure it’s well drained), garlic powder, and the remaining shredded mozzarella and grated Parmesan cheese.
Add salt and pepper to taste if desired.
Step 4: Assemble the Zucchini Roll-Ups
Spread ¼ cup of marinara sauce on the bottom of an 8-inch square baking dish to prevent sticking and add flavor.
Lay a cooked zucchini strip on a flat surface, scoop about 1 tablespoon of the cheese filling onto the bottom part of the strip, and roll it up tightly to form a pinwheel.
Place the roll seam-side down in the baking dish.
Repeat with the remaining zucchini strips and filling until the dish is filled with zucchini pinwheels.
Step 5: Add the Final Ingredients and Bake
Pour the remainder of your marinara sauce evenly over the zucchini rolls in the baking dish.
Sprinkle the combined shredded mozzarella and Parmesan cheese topping evenly over the sauce-coated zucchini rolls.
Step 6: Bake and Serve
Bake the assembled zucchini rolls in the preheated oven for an additional 15-20 minutes, or until the cheese is melted and bubbly and the filling is heated through.
Remove from the oven and let it rest for a few minutes before serving.
