Ingredients
  

  • 1 tsp salt
  • 1 tbsp chopped fresh herbs (optional but recommended)
  • 1/2 tsp black pepper (freshly ground preferred)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 lb turkey tails

Instructions
 

  • Preheat your oven to 400°F (200°C). While the oven is heating, wash the turkey tails thoroughly under cold water and pat them dry using paper towels. Carefully use tweezers to remove any visible quill ends or feather remnants to ensure the turkey tails are clean and ready for seasoning.
  • Season the cleaned turkey tails evenly with salt, black pepper, onion powder, and garlic powder on all sides. If you like, sprinkle the chopped fresh herbs over them for extra fragrance and flavor. I find that using fresh herbs really brightens up the finished dish.
  • Place the seasoned turkey tails on a rack set over a foil-lined baking pan. This allows fat to drip down and the turkey tails to roast evenly. Bake in the preheated oven for about 1 hour, or until the skin is golden and crisp.
  • Remove the turkey tails from the oven and let them rest on the rack for about 10 minutes to retain their juices. Then, transfer them to a serving plate and serve as desired. I like letting them rest before serving so they're extra juicy and flavorful.
