Preheat your oven to 325°F and line a baking sheet with aluminum foil for easy cleanup. Using kitchen shears, cut the bacon into thirds to make smaller strips suitable for wrapping around the sausages.
Wrap one third of a bacon slice around each cocktail sausage, then secure each one with a toothpick to hold the bacon in place. Arrange the wrapped sausages evenly on the prepared baking sheet. Repeat until all the sausages and bacon have been used.
Sprinkle the packed brown sugar evenly over the bacon-wrapped sausages. Bake in the preheated oven for 40-45 minutes, or until the bacon is cooked through and beginning to brown. I like to use dark brown sugar for a deeper caramelized flavor—it makes a noticeable difference!
