Save Those Scraps
Next time you’re chopping up green onions, don’t toss the roots! Save that white bulbous part—this is the magic piece you’ll need to regrow your green onions.
Make sure to leave about an inch of the white part with the roots. You’ll be amazed at how simple and fun this is!
Get a Glass Jar
Grab a small glass jar or a cup. Place the green onion bulbs root-side down in the jar.
Fill it with just enough water to cover the roots, but don’t submerge the white part. This is where the regrowth happens, and you can see it start to sprout within days.
Find a Sunny Spot
Put your jar on a sunny windowsill. Green onions love sunlight and will grow quickly if they get plenty of it.
In about a week, you’ll see green shoots sprouting up. Rotate the jar occasionally so all sides get their share of sun.
Change the Water
Keep the water fresh by changing it every couple of days. This prevents mold and keeps the water oxygenated.
It’s a bit of upkeep, but totally worth it for a continuing supply of fresh green onions!
Harvest and Enjoy
Once your green onions are a few inches long, you can start harvesting. Just snip off what you need and leave the rest to keep growing.

Plant in Soil for Longer Growth
If you want to take it a step further, plant your green onions in soil after they’ve sprouted in the water. Choose a pot with good drainage, fill it with potting soil, and make a hole about an inch deep for each bulb.
Water them regularly and keep them in a sunny spot.
