Ingredients

- 1/4 cup plus 2 tbsp powdered sugar
- 1 cup large curd cottage cheese (low-fat preferred to prevent sogginess)
- 1 tsp vanilla extract
- 1/2 cup pancake mix (I like Bisquick Original Pancake and Baking Mix)
- 1/2 cup all-purpose flour
- 1/8 tsp salt
For the lemon:
- zest of 1 lemon (freshly grated for best flavor)
- juice of 2 lemons
For the eggs:
- 3 large eggs, separated
For cooking:
- extra unsalted butter for greasing
- 1 stick unsalted butter, melted (I like Kerrygold unsalted butter)
Step 1: Prepare Wet Ingredients
In a bowl, mix the juice of 2 lemons, the zest of 1 lemon, egg yolks, cottage cheese, powdered sugar, and vanilla extract.
Set this mixture aside for a while to let the flavors meld together.
Step 2: Combine Dry Ingredients
In a separate bowl, combine the all-purpose flour, pancake mix, and salt.
Mix these dry ingredients well to ensure even distribution of the baking components.
