Preparation Time | 10-15 minutes |
Cooking Time | 10-20 minutes |
Total Time | 20-35 minutes |
Level of Difficulty | Medium |
Ingredients
- Zest from 1 lemon
- Juice from 2 lemons
- 3 whole eggs (separate yolks and whites)
- 1/4 cup and 2 tablespoons powdered sugar
- 1/2 cup regular flour
- 1/8 teaspoon salt
- 1/2 cup pancake mix (like aunt jemima)
- 1 cup large curd low-fat cottage cheese
- 1 teaspoon vanilla essence
- 1 stick unsalted butter, melted (plus extra for greasing the pan)
Step 1: Prepare Wet Ingredients
In a bowl, mix the juice of 2 lemons, the zest of 1 lemon, egg yolks, cottage cheese, powdered sugar, and vanilla extract.
Set this mixture aside for a while to let the flavors meld together.
Step 2: Combine Dry Ingredients
In a separate bowl, combine the all-purpose flour, pancake mix, and salt.
Mix these dry ingredients well to ensure even distribution of the baking components.
Step 3: Combine Wet and Dry Mixtures
Gently mix the flour mixture into the cottage cheese mixture until just combined.
Be careful not to overmix to keep the batter light and airy.
Step 4: Incorporate Butter
Stir in the melted butter until it is fully incorporated into the batter.
This will add richness and flavor to your pancakes.
Step 5: Fold in Whipped Egg Whites
In a separate bowl, whip the egg whites to soft to medium peaks.
Gently fold the whipped egg whites into the batter, taking care not to deflate them, as they will help make the pancakes fluffy and light.
Step 6: Cook the Pancakes
Heat a buttered griddle over medium heat.
Pour the batter onto the griddle, forming pancakes of your desired size.
Cook until bubbles form on the surface and the edges look set, then flip and cook until the other side is golden brown.
Step 7: Serve
Serve the pancakes hot, topped with maple syrup, powdered sugar, or your choice of toppings.
Enjoy your delicious lemon cottage cheese pancakes!
