  • 1 tsp baking powder (I use Bob’s Red Mill)
  • Salt to taste
  • 1 medium zucchini (about 1.5 cups grated)
  • Butter for greasing (or non-stick spray)
  • 2 large eggs
  • 1/4 red bell pepper (finely diced for even cooking)
  • 1 cup grated cheese (cheddar or mozzarella work well)
  • 1 cup all-purpose flour
  • Black pepper to taste

Step 1: Preheat the Oven and Prepare Ingredients

Begin by preheating your oven to 200°C (392°F).

While the oven is heating, grate 1 medium zucchini without squeezing out the moisture and finely dice 1/4 of a red capsicum, if using.
