It’s creamy, cheesy, and packed with veggies. Plus, it’s super easy to whip up!
This casserole is great as a side dish or even as a main.

Ingredients
For the casserole:
- 2 cups chopped broccoli (florets, about 1-inch pieces)
- 2 large eggs (beaten lightly)
- 1/2 cup mayonnaise (I like Hellmann’s mayonnaise)
- 2 cups chopped cauliflower (florets, about 1-inch pieces)
- 1/2 cup diced onion (yellow or white onion, finely diced)
- 1/2 cup shredded cheddar cheese (sharp cheddar works best for flavor)
For the topping:
- 1 (15 oz) package seasoned croutons, crushed (any flavor, crushed into coarse crumbs)
- 1/2 cup shredded cheddar cheese
- 1/2 cup melted butter (unsalted, melted and cooled slightly)
Step 1: Preheat the Oven and Prepare the Vegetables
Preheat your oven to 350°F (175°C).
While the oven is heating, place the broccoli and cauliflower in separate saucepans.
Cover them with water and bring to a boil.
Cook until tender, which should take about 3 to 4 minutes.
Once done, drain the vegetables and arrange them evenly in an 11×7-inch baking dish.
Step 2: Mix the Egg and Cheese Mixture
In a separate bowl, beat the eggs until they are creamy.
Stir in 1/2 cup of Cheddar cheese, mayonnaise, and chopped onion.
Mix until well combined.
Pour this mixture evenly over the broccoli and cauliflower in the baking dish, ensuring all the vegetables are coated.
Step 3: Add Toppings
Pour the melted butter over the egg and cheese mixture in the baking dish.
Sprinkle the remaining 1/2 cup of Cheddar cheese on top.
Finally, scatter the crushed croutons evenly over the entire dish.
Step 4: Bake the Casserole
Place the baking dish in the preheated oven and bake until the casserole is browned and bubbling, about 40 minutes.
Once cooked, remove from the oven and let it cool slightly before serving.
