Ingredients
For the cranberry mixture:
- 2 cups cranberries (fresh or frozen, not dried)
- 1/4 tsp ground cinnamon
- 2 to 4 tbsp brown sugar (start with 2 tbsp and add more to taste)
- 1 tbsp butter (melted and cooled)
For the assembly:
- 1 egg (beaten for an egg wash)
- 2 wheels brie cheese (8 oz each, preferably a double-cream variety)
- 2 sheets puff pastry (thawed according to package instructions)
- 1/3 cup fig jam (Bonne Maman is a good choice)
For the garnish:
- fresh thyme (chopped, for garnish after baking)
- coarse sugar (decorate the pastry before baking)
Step 1: Preheat the Oven and Prepare Baking Sheet
Preheat your oven to 425 degrees Fahrenheit.
While the oven is heating, line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
Step 2: Prepare the Cranberry Filling
In a medium bowl, combine the butter, cranberries, brown sugar, and cinnamon.
Mix until the cranberries are well coated with the buttery and sweet mixture.
Step 3: Prepare the Puff Pastry
Take each sheet of puff pastry and cut them into 6 rectangles.
Spread about 1 teaspoon of fig preserves on each rectangle, leaving a 1/4 inch border around the edges.
Add 2 slices of brie on top of the fig preserves, then mound the prepared cranberries over the brie.
Press the cranberries into the brie slightly to help them adhere.
Step 4: Fold and Brush the Pastry
Fold the edges of each puff pastry rectangle inward to enclose the brie and cranberries.
Brush the edges of the pastry with beaten egg, then sprinkle them with coarse sugar for added texture and sweetness.
Step 5: Bake and Serve
Transfer the prepared puff pastries to the pre-lined baking sheet.
Place them in the preheated oven and bake for 15-20 minutes, or until the pastry is golden brown and the brie is melted.
Once done, remove from the oven and top with fresh thyme.
Serve warm and enjoy!
