Ingredients
- 3 cups cooked, diced boneless skinless chicken breasts
- 2 cups halved seedless red grapes
- 1 1/2 cups diced celery (3 medium stalks)
- 1/4 cup thinly sliced green onions (2 large or 3 small/medium)
- 1/2 cup toasted sliced almonds (or slivered almonds)
- 1 cup plain nonfat greek yogurt
- 2 tablespoons nonfat milk
- 2 teaspoons honey
- 1 teaspoon kosher salt (with more to taste)
- 1/2 teaspoon black pepper (with more to taste)
- 2 tablespoons chopped fresh dill
- Suggested accompaniments: whole-grain bread, croissants, lettuce leaves, or crackers
Step 1: Combine the Main Ingredients
Place the diced chicken, grapes, celery, green onions, and almonds in a large bowl.
This will serve as the main base of the salad.
Step 2: Prepare and Mix the Dressing
In a separate bowl, whisk together the Greek yogurt, milk, honey, salt, and pepper.
Ensure the dressing becomes smooth and well-blended.
Step 3: Toss the Chicken Mixture with the Dressing
Pour the prepared dressing over the chicken mixture in the large bowl.
Toss everything together until all ingredients are evenly coated.
Taste the mixture and add additional salt and pepper as necessary to suit your preference.
Step 4: Refrigerate to Enhance Flavors
If time permits, cover the bowl with plastic wrap or a lid and refrigerate the mixture for 2 hours or overnight.
This will allow the flavors to meld together beautifully.
Step 5: Serve and Enjoy
When ready to serve, sprinkle the salad with fresh dill for an added burst of flavor.
This chicken salad can be served in various ways: as a filling for sandwiches, atop salad greens, as a dip with crackers, or simply enjoyed straight from the bowl.
