Today, I’m sharing my go-to recipe: chicken breast and zoodles.
It’s a delightful way to enjoy chicken with a twist.

Ingredients
For the chicken:
- 1 tbsp olive oil
- 1 lb chicken breast (thinly sliced works best for quick cooking)
- 1 tsp paprika
- pepper to taste
- salt to taste
For the zoodles:
- 2 cloves chopped garlic (freshly minced provides the best flavor)
- 2 lbs spiralized zucchini (can buy pre-spiralized for convenience)
- 2 tbsp butter (I like using Kerrygold unsalted butter)
- salt to taste
- 2 tbsp olive oil
- 1/4 tsp red pepper flakes (adjust to your preferred spice level)
- pepper to taste
Step 1: Season and Prepare the Chicken
Place the chicken into a medium bowl.
Add paprika, salt, pepper, and olive oil to the chicken.
Mix well to ensure the chicken is evenly coated with the seasoning.
Step 2: Cook the Chicken
Heat up a large non-stick skillet over medium heat.
Once heated, add the seasoned chicken to the skillet and cook for about 4 minutes on each side, or until the chicken is cooked through.
Remove the chicken from the skillet and keep it warm while you prepare the rest of the dish.
Step 3: Cook the Zucchini Noodles
To the same skillet, add butter and minced garlic.
Then, add zucchini noodles (zoodles) and season them with salt and red pepper flakes.
Allow them to cook for 3-4 minutes, or until they start to soften, stirring occasionally to ensure even cooking.
Step 4: Combine and Serve
Remove the skillet from the heat.
Slice the cooked chicken and place it on top of the zucchini noodles.
Serve immediately for a delicious and healthy meal.
