Preparation Time | 15-20 minutes |
Cooking Time | 10-14 minutes |
Total Time | 25-34 minutes |
Level of Difficulty | Easy |
Ingredients
- 3/4 cup butter (or a mix of 1/2 cup butter and 1/4 cup shortening)
- 1 cup granulated sugar
- 1 large egg (room temperature)
- 1/2 teaspoon almond essence (or 1 teaspoon vanilla essence)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 3/4 cups plain flour
- 1 cup chopped christmas gumdrops
Step 1: Preheat the Oven and Prepare the Baking Sheet
Start by preheating your oven to 350°F (175°C).
Line one or more baking sheets with parchment paper or a silicone baking mat to ensure the cookies do not stick during baking.
Step 2: Cream Butter and Sugar
In a large mixing bowl or the bowl of your stand mixer, cream together the butter (or a blend of butter and shortening) with granulated sugar.
Use medium speed and mix until the mixture is light and fluffy, which should take about 1 minute.
Then, beat in the egg and almond extract until well combined.
Step 3: Add Dry Ingredients
Mix in the baking soda and salt.
Gradually add the flour, continuing to mix until the dough is smooth and all the dry ingredients are fully incorporated.
Finally, fold in the chopped Christmas gumdrops, ensuring they are evenly distributed throughout the cookie dough.
Step 4: Portion the Cookies
Using a tablespoon, drop portions of the cookie dough onto your prepared baking sheet.
Make sure to leave about 2 inches of spacing between each cookie to allow for spreading during baking.
Step 5: Bake the Cookies
Bake the cookies in your preheated oven at 350°F (175°C) for 10-14 minutes, or until the bottoms of the cookies just begin to turn a light golden color.
Remove the cookies from the oven and let them cool on the baking sheet for 2-3 minutes.
Step 6: Cool Completely
After allowing the cookies to cool on the baking sheet, transfer them to a wire cooling rack to cool completely.
Once cooled, they are ready to be enjoyed or stored for later!
