Today, I’m excited to share my favorite Christmas cookies with mint chips.
They’re sweet, festive, and packed with that perfect minty flavor.

Ingredients
- 4 cups all-purpose flour (unbleached)
- 1 cup white sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla essence
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup crisco shortening
- 10 oz. package chocolate and mint chips
- 10 oz. package holiday semi-sweet chocolate morsels (red and green pieces)
Step 1: Mix Wet Ingredients
In a large mixing bowl, use an electric mixer to combine sugars, eggs, vanilla, baking soda, salt, and shortening until the mixture is smooth and well-blended.
Step 2: Add Dry Ingredients and Mix-Ins
Using a wooden spoon, stir in the flour into the mixture.
Add all of the chocolate and mint chips, and half of the holiday semi-sweet morsels.
Continue stirring until everything is very well combined, ensuring the chips are evenly distributed throughout the dough.
Step 3: Prepare Cookie Dough Balls
Preheat your oven to 375°F (190°C).
Roll the dough into balls and place them on cookie sheets that have been sprayed with cooking spray to prevent sticking.
Make sure to space the dough balls evenly on the sheets to allow for spreading during baking.
Step 4: Bake the Cookies
Bake the cookie dough balls in the preheated oven for 10-12 minutes or until done.
Rotate the cookie sheets on the oven racks after six minutes of baking time to ensure even baking.
The cookies should be golden brown and set around the edges.
Step 5: Add Final Touch and Cool
Immediately after removing the cookies from the oven, place the remaining holiday morsels on the tops of the cookies.
Gently press the chips into the tops of the hot cookies.
Allow the cookies to cool completely on the baking sheets or transfer them to a wire rack to cool.
