Ingredients
- 1 cup unsalted butter (cold, sliced)
- 1 1/4 cups brown sugar
- 1/2 cup white sugar
- 2 room temperature eggs
- 1 teaspoon vanilla essence
- 2 cups plain flour
- 1/2 cup cake flour
- 1 1/2 cups old-fashioned oats
- 1 teaspoon cornstarch
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup chocolate caramel baking bits
- 1 cup crushed pretzels
- 1/2 cup crushed candy canes
Step 1: Preheat and Prepare the Baking Sheet
Preheat your oven to 410°F.
Line a baking sheet with parchment paper or a silicone baking mat to prevent the cookies from sticking and to ensure even baking.
Step 2: Make the Sugar Mixture
In the bowl of a stand mixer, cream together the butter and sugars.
Start on low speed for 1 minute and then increase to medium speed for an additional 3 minutes until the mixture is light and fluffy.
Then, add the eggs and vanilla extract to the sugar mixture, keeping the mixer speed on low to avoid splattering.
Step 3: Combine Dry Ingredients
In a separate large bowl, whisk together the cake flour, all-purpose flour, oats, cornstarch, baking soda, salt, and cinnamon.
Ensure the dry ingredients are evenly mixed to prevent any clumps from forming in the dough.
Step 4: Mix the Dough
Slowly add the dry ingredient mixture to the sugar mixture in the stand mixer, keeping the mixer on low speed until everything is fully incorporated.
Once mixed, add the chocolate caramels, pretzels, and candy cane pieces, continuing to mix on low speed.
This will distribute the add-ins evenly throughout the dough.
Step 5: Chill the Dough
Cover the bowl of dough with plastic wrap and chill it in the refrigerator for 15-20 minutes.
This will firm up the dough, making it easier to handle and helping the cookies maintain their shape during baking.
Step 6: Portion and Roll the Dough
Using a large cookie scoop, portion out dough balls.
Place each dough ball into a small bowl of crushed pretzels and peppermints, rolling until the surface is fully covered.
This will add a delightful crunch and festive flavor to your cookies.
Step 7: Bake the Cookies
Place the coated cookie dough balls onto the prepared baking sheet.
Gently press down the middles so they’re slightly flattened, leaving enough space (about 5 cookies per pan) to allow for spreading.
Bake in the preheated oven for 9-11 minutes, or until the cookies are golden brown on top.
