Today, I’m excited to share a festive recipe for Christmas cookies with peppermint.
They’re sweet, minty, and packed with holiday cheer.
Perfect for sharing with friends or enjoying with a warm cup of cocoa.

Ingredients
- 1 1/4 cups all-purpose flour (150 grams)
- 1/2 cup unsalted butter (room temperature)
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon peppermint extract
- 1/4 teaspoon baking soda
- Pinch of salt
- 3/4 cup white chocolate chips
- 1/2 cup crushed candy cane
Step 1: Preheat and Prepare Dry Ingredients
Preheat the oven to 350°F (175°C).
In a bowl, combine 150 grams (1 1/4 cups) of all-purpose flour, 1/4 teaspoon of baking soda, and a pinch of salt.
Whisk these together and set the bowl aside.
Step 2: Cream Butter and Sugar
Using a stand mixer fitted with a paddle attachment, cream together 1/2 cup of unsalted butter (at room temperature) and 1/2 cup of sugar until the mixture is light and fluffy.
Step 3: Incorporate Wet Ingredients
Add 1 room temperature egg to the butter and sugar mixture and mix until it’s fully incorporated.
Then, add 1/2 teaspoon of vanilla extract and 1/4 teaspoon of peppermint extract, mixing well to combine all the wet ingredients.
Step 4: Combine Dry and Wet Ingredients
Gradually add the flour mixture to the wet mixture, mixing on low speed until just combined.
Be careful not to overmix.
Fold in 3/4 cup of white chocolate chips and 1/2 cup of crushed candy cane.
Step 5: Chill the Dough
Chill the dough wrapped in plastic wrap for 10-20 minutes.
Alternatively, you can scoop it directly onto a baking sheet and chill it there for the same amount of time to make the scooping process easier.
Step 6: Portion and Bake the Cookies
Use an ice cream scoop to portion out the cookie dough onto a baking sheet lined with parchment paper or a silicone baking mat.
Bake the cookies in the preheated oven for 6-7 minutes until they are set.
Once out of the oven, use a round cookie cutter to shape the cookies while they are still warm.
Allow the cookies to cool completely on the baking sheet before transferring them to a wire rack.
