Today, I’m sharing a delicious recipe for Christmas cranberry buckle.
It’s sweet, tart, and full of holiday cheer.

Ingredients
- 2 cups softened salted butter
- 1 1/3 cups white sugar
- 2 tablespoons vanilla extract
- 1 teaspoon salt
- 4 cups plain flour
- 1 cup white chocolate chips (or chopped white chocolate)
- 1/2 cup chopped macadamia nuts (optional)
- 3 cups fresh or frozen cranberries (rinsed and dried)
Step 1: Prepare the Baking Dish and Oven
Start by heating your oven to 350°F.
Line a 9×13″ baking dish with a parchment paper sling to make removal easier after baking.
Set aside while you prepare the dough.
Step 2: Make the Dough
In a large mixing bowl, cream the butter and sugar together until the mixture is light and fluffy.
Add in the vanilla and salt, beating until fully combined.
Gradually add the flour, stirring just until the ingredients are mixed.
Finally, fold in the white chocolate chips and chopped macadamia nuts.
Step 3: Assemble the Layers
Lightly press 2/3 of the dough into the bottom of the prepared baking dish using your fingers to create an even layer.
Pour the cranberries over the top of this dough layer.
Crumble the remaining 1/3 of the dough over the cranberries.
It’s okay if some cranberries are visible beneath the top layer.
Step 4: Bake the Shortbread
Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the edges of the shortbread start to turn golden.
Keep an eye on it to avoid overbaking and ensure a perfect texture.
Step 5: Cool and Slice
Once baked, remove the dish from the oven and let the shortbread cool completely in the pan.
Using the parchment paper sling, lift the shortbread out of the dish and place it on a cutting board.
Slice into small bars and enjoy your delicious treat!

These were super easy to make and took just a few minutes. They are absolutely delicious. The berries add just the perfect amount of tartness to the sweetness of the shortbread and the white chocolate chips.
