Preparation Time 15-25 minutes
Cooking Time 11-13 minutes
Total Time 56-73 minutes
Level of Difficulty Medium

Ingredients

  • 15 teaspoons heaped nutella
  • 115 grams unsalted butter
  • 175 grams light brown sugar
  • 1 teaspoon vanilla extract
  • 1 medium egg
  • 275 grams all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 200 grams finely chopped chocolate

Step 1: Prepare the Nutella Centers

Scoop heaped teaspoons of Nutella onto a lined tray, and freeze until solid.

This usually takes 30-60 minutes.

While waiting for the Nutella to freeze, you can start preparing the other ingredients for the cookie dough.

Step 2: Make the Cookie Dough

Once the Nutella has frozen, preheat the oven to 190°C (170°C for fan ovens).

Beat together the butter and sugar until fluffy, then add the vanilla and egg, beating again until smooth.

In a separate bowl, whisk together the flour, salt, bicarbonate of soda, and cornflour.

Gradually add the dry mix into the wet ingredients.

Finally, add the finely chopped chocolate and mix until combined.

Step 3: Shape the Cookies

Using a 5cm cookie scoop (or dividing the dough into 15 portions), scoop the cookie dough.

Flatten each dough portion slightly into a disc shape, and place a frozen lump of Nutella in the center of each disc.

Wrap the cookie dough around the Nutella to fully encase it, forming a ball of cookie dough.

Step 4: Prepare for Baking

Line 2-3 large trays with parchment paper.

Place 6 cookies on each tray, ensuring adequate spacing as the cookies will spread while baking.

Step 5: Bake the Cookies

Bake in the preheated oven for 11-13 minutes, or until the cookies are golden.

Keep in mind that the longer you bake them, the less gooey they will be in the center.

Allow the cookies to cool on the trays for a few minutes before transferring them to a wire rack to cool completely.
