Preparation Time | 20-30 minutes |
Cooking Time | 20-22 minutes |
Total Time | 50-70 minutes |
Level of Difficulty | Medium |
Ingredients
- 1 cup soft butter
- 1 1/2 cups self-raising flour
- 1 cup caster sugar
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon salt
- 2 large free-range eggs
- 1/2 cup milk
- 1/4 cup golden syrup
- 2 tablespoons armanac (or brandy/whiskey)
- 2 cups icing sugar
Step 1: Preheat and Prepare
Preheat your oven to 170°C (340°F) in a fan-assisted setting.
This will ensure the oven is ready for baking once your batter is prepared.
Step 2: Mix Dry and Wet Ingredients
In a mixing bowl, add softened butter.
Sift in self-raising flour, caster sugar, ginger, cinnamon, cloves, bicarbonate of soda, and a pinch of salt.
In a separate bowl, mix together warm milk and golden syrup until well combined.
Step 3: Combine Ingredients
To the dry ingredients, add two large free-range eggs and beat for about 30 seconds until well combined.
Gradually pour in the milk and golden syrup mixture while mixing on low speed, then increase the speed and mix for another 30 seconds.
Scrape down the sides and bottom of the bowl, then mix again until the batter is smooth.
Step 4: Fill and Bake
Spoon the batter into cupcake liners placed in a muffin tray.
Bake in the preheated oven for 20 to 22 minutes.
Check at 20 minutes for doneness by lightly pressing on the top; if it springs back, they are ready.
Allow the cupcakes to cool for a few minutes before transferring them to a wire rack to cool completely.
Step 5: Prepare the Buttercream
In a mixing bowl, beat softened butter for about 5 minutes until pale and fluffy.
Sift in half of the icing sugar and mix for 3 to 4 minutes.
Add the remaining icing sugar and mix for another 3 to 4 minutes.
Add two tablespoons of armanac to the buttercream and mix well, adjusting the texture with more armanac if needed.
Step 6: Decorate the Cupcakes
Transfer the buttercream to a piping bag fitted with a multi-star nozzle.
Pipe the buttercream onto the completely cooled cupcakes.
Decorate the cupcakes with festive sprinkles or any desired toppings to add a festive touch.
Serve and enjoy!
