Ingredients
- 4 pounds flank steak
- 1 teaspoon sea salt
- 1 cup cranberry sauce
- 1/4 cup balsamic vinegar
- 2 sprigs rosemary
- 1 white onion, sliced
- 1 tablespoon minced garlic
- 1 cup crumbled blue cheese
- 1/2-1 tablespoon freshly cracked peppercorns
- 1/2 cup cranberries
- 1 tablespoon chopped fresh rosemary
- 1 small shallot
- 1/4 cup chopped walnuts
- 1 cup blue cheese crumbles
- 4 ounces softened cream cheese
- 1 teaspoon black pepper
Step 1: Marinate the Steak
Start by preparing the marinade.
Add the steak to a Ziplock bag.
Pour in cranberry sauce and balsamic vinegar.
Add fresh rosemary, onion slices, and garlic cloves.
Seal the bag and let the steak marinate in the refrigerator for at least 3 hours, or up to 8 hours for better flavor absorption.
Step 2: Prepare the Filling
While the steak is marinating, prepare the filling.
Add all filling ingredients to a food processor or blender and pulse for about 30 seconds to combine and lightly break down the ingredients.
Set the filling aside for later use.
Step 3: Butterfly and Fill the Steak
Remove the marinated steak from the bag, season with salt and pepper, and allow it to come to room temperature.
Butterfly the steak by slicing it in half widthwise, stopping before cutting all the way through, then lightly pound it with a meat mallet to even out the thickness.
Spread the prepared filling evenly over the steak.
Roll the steak into a tight log and secure it with kitchen twine.
Wrap the rolled steak tightly in plastic wrap and refrigerate it for 10 to 15 minutes to help it hold its shape.
Step 4: Sear the Steak
Meanwhile, heat a frying pan over medium-high heat.
Spread fresh cracked pepper onto a plate and roll the steak in the pepper to coat the exterior.
Sear the rolled steak in the hot pan for about 2 minutes per side to create a flavorful crust.
Step 5: Bake the Steak
Preheat your oven to 350°F (175°C).
Transfer the seared steak to an oven-safe dish and place it in the preheated oven.
Bake for about 20 minutes for medium rare doneness.
Adjust the time slightly for your preferred level of doneness.
Step 6: Rest, Slice, and Serve
Once baking is complete, remove the steak from the oven and let it rest for 10 minutes to allow the juices to redistribute.
After resting, slice the steak into rounds and serve.
