Cooking Time 15-30 minutes
Total Time 30-55 minutes
Level of Difficulty Medium

Ingredients

  • 4 cups fresh spinach leaves
  • 1 (14 ounce) can artichoke hearts
  • 1 cup grated mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 cup cottage cheese
  • 1/4 cup mayonnaise
  • 1 clove garlic
  • 2 teaspoons italian seasoning
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • Dash of pepper
  • Olive oil

Step 1: Sauté the Spinach

Begin by heating a pan over medium to high heat and drizzling in a little olive oil.

Once hot, add 4 cups of fresh spinach leaves to the pan.

Sprinkle with a pinch of salt and onion powder.

Stir the spinach gently until all the leaves are wilted.

After wilting, transfer the spinach to a paper towel-lined plate to soak up excess moisture and set aside to cool.

Step 2: Prepare the Artichoke Hearts

Open a 14-ounce can of artichoke hearts, drain the excess liquid, and squeeze out any remaining moisture using a towel or nut bag.

Chop the drained artichoke hearts into small pieces and transfer them to a medium-sized mixing bowl.

Step 3: Combine Spinach and Cheeses

Once the spinach has cooled, roll it in the paper towel to squeeze out any excess moisture.

Chop the spinach into small pieces and add it to the mixing bowl with the chopped artichokes.

Then, add 1 cup of grated mozzarella cheese and ¼ cup of grated Parmesan cheese to the bowl.

Mix everything together until well combined.

Step 4: Blend the Creamy Mixture

In a blender, combine 1 cup of cottage cheese, ¼ cup of homemade mayonnaise, 1 clove of minced garlic, 2 teaspoons of Italian seasoning, 1 teaspoon of onion powder, ½ teaspoon of salt, and a dash of pepper.

Blend the mixture on high until smooth, scraping down the sides halfway through to ensure everything is well incorporated.

Step 5: Combine All Ingredients

Pour the blended mixture into the mixing bowl with the spinach and artichokes.

Mix all the ingredients together until thoroughly combined, ensuring an even blend of flavors and textures.

Step 6: Serve Your Dip

You can enjoy the dip cold, slightly heated, or baked.

If you choose to bake it, preheat the oven to 250°F (120°C) and monitor it closely to prevent curdling.

For a quick microwave option, spread the dip in a bowl and heat in 40-second intervals, stirring in between, until the cheese has melted.

Once ready, transfer the heated dip to a serving dish and enjoy with sweet potato chips or fresh vegetables.
